L’Ermitage Beverly Hills announced yesterday that it has named Nicholas Rimedio as food and beverage director, overseeing all culinary efforts and partnerships for the property.

The property is part of the Viceroy Hotel Group.

A 15-year veteran of the restaurant and hospitality industry, Rimedio’s experience ranges from small, family-run eateries to five-star restaurants in epicurean meccas. For the past two years, Rimedio has worked on the development, construction and opening of the gastro-lounge Empire in downtown Napa, Calif., where he still remains as owner. Most notably, Rimedio served as the general manager for the late chef Charlie Trotter’s flagship restaurant in Chicago, and later at Restaurant Charlie at the Palazzo in Las Vegas before ultimately departing in 2009. He previously held the position of general manger of Southern Pacific Smokehouse in Novato, Calif., and food and beverage director at Carmel Valley Ranch when the property was anchored by Michel Richard’s Citronelle.

Besides implementing new dining concepts, Rimedio will oversee social events featuring renownded culinary and wine experts as well as chefs from around the globle, according to a statement from management.
